A Healthy and Delicious Chicken Dinner

Traditionally this is the season when a lot of us start thinking about healthy eating and healthier habits. We join gyms, try to get out and exercise, and try to eat healthier foods. Often eating a balance, more sensible diet sounds good on paper but can be awfully hard to follow-through on in our daily lives. And some of the diets outlined can seem pretty bland and dull. Most recommend whole grains, fresh fruits and vegetables, and lean meat like poultry.

What's great about poultry and especially chicken is that it's such a versatile blank slate. The are so many ways to cook this great protein with results in a wide array of tastes and textures. Chicken goes well with many different side dishes, so it's very easy to create a complete meal in a short time. You can grill it, bake it, cook it up in a stir-fry dish, make it sweet or spicy - it's all a matter of you own personal taste.

Chicken, especially if you choose to make cutlets or cubed style, cooks quickly making it easy to cook even during your hectic workweek. One sample menu could simply be cutlets coated in a bit of lemon and herbs or marinade, baked in your oven and served with a side of herbed risotto and a fresh balsamic salad. In less than 25-minutes you'll have a satisfying and delicious meal for your whole family to enjoy. Another timesaver is making double portions so you can enjoy the meal again later in the week.

You can grill chicken anytime with an electric grill, whether it's barbecued strips or a homemade version of chicken nuggets. One of our family favorites is a homemade chicken kebob. They taste great and they're a fun meal that the kids love too. You just cube up some cutlets and take the cutlet pieces along with some fruits (like pineapple or melon) and some veggies (like zucchini or pepper) and put them on your skewers and place them on the grill. These are great with a mixed green salad and some fresh homemade bread or pasta.

Stir-fry is a great cooking method for chicken and a fast and easy meal to create for any night. While stir-fry is easiest in a deep-dish wok, any decent skillet or fry pan will serve just fine for cooking up a delicious stir-fry dish. What's great about stir-fry is it's a healthy, low fat cooking method that produces very tasty results. You can make it sweet or spicy, it's up to you.
